What I learned as a professional baker in Noida
Not every cake that comes out of a professional kitchen is perfect- more importantly, it is something that most people dont talk about it.
I am sharing this today to give an alternative to someone who face this due to any issue
At Butter Sugar Dough, we are known for our buttercream cakes in Noida, made with quality ingredients. But today, I want to share something different- A CAKE THAT DIDN’T GO AS PLANNED
The day my cake failed
I was so excited to bake a STITCH theme cake for Karmanya who was turning 7 next day. It was a busy day in kitchen, base was perfectly baked, layered and covered with smooth buttercream frosting.
Everything looked just right.
It was evening by the time we finished it for a delivery by 1pm next day to DLF Mall of India. Leaving only the decoration part with figurines, I left for the day around 8pm.
We had moved a new place recently & were still setting up the place.
The next morning- A complete setback
2 hours was more than enough for the cake to get decorated next morning & hence I had planned the day accordingly. I reached the studio around 10:30 am & almost fainted when I saw the fridge. Frosting had completely melted & lost its structure. The cake was no longer in a condition that could be decorated or delivered. At that moment, it wasnt a small issue- It was a reset
The real Challenge
There was no time left to bake a fresh cake base from scratch as at Butter Sugar Dough, we make everything fresh
After working for many years in QSR, I had quick decision making as part of my DNA. What I did next would surprise you
Instead of compromising on quality, I sourced the most expensive cake of the same flavour from Theo’s next door. Bought 2 kgs of fresh base, done the frosting as per the theme, rebuilt from scratch & ensure everything was precise as our standard.
Why this matters
Because what was delivered was

Working for QSR for 14 years have always trained me to not compromise with standards & stick to process. That effort to deliver the cake to the client will always stay with me as major learning.
The lesson:
The power failure was the reason for this & the inverter didnt work
-Always have the inverter running(battery check & working)
-Install a CCTV in front of the fridge to keep an eye randomly (overnight)
